Spinach-Pepper Jack Swirls

The second app for my mom's party (see Summer Rolls for the first!) was originally going to be a mushroom and goat cheese tart on puff pastry, but on the Pepperidge Farm puff pastry package (that's a mouthful!) I saw a recipe for these spinach-cheese swirls. It seemed easy to make and easy to impress with, so I decided to try these and do the mushroom tart later this week. I definitely never realized the versatility of puff pastry - desserts, apps, dinner, anything and everything is possible. It gives a delicious crunchy, light texture to any dish.
So I take no ownership over this recipe, because I more or less made it how the original recipe said, with minor changes. It's seriously easy to impress with and DELICIOUS, so I recommend it for your own fancy dinner parties.

1 egg
1 tablespoon water
1/2 cup pepper jack cheese, grated
1/4 cup Parmesan cheese, grated
1 bunch green onion, chopped
1/2 teaspoon thyme leaves
1/8 teaspoon salt
1 puff pastry sheet, enough for a 10" by 10" square
2 cups fresh spinach 

Allow puff pastry sheet to thaw at least 40 minutes. Preheat oven to 400 F. Combine/beat the egg and water to make an egg wash. Combine pepper jack cheese, Parmesan cheese, green onion, and salt in another bowl. Roll puff pastry sheet out to about a 10"x10" square. Brush egg wash over the sheet. Sprinkle cheese mixture evenly over entire sheet. Add spinach on top, evenly scattered. 


Roll puff pastry sheet carefully into a tight log. "Tuck and roll" technique works here too - tuck the cheese and spinach in as you roll. 


Cut the log into about 20 even slices. Reshape them into circles with your hands if they've flattened a bit on the edges. Place on baking sheet and brush the tops with egg wash. Bake for about 15 minutes or until golden brown.


And they come out beautifully! The only slightly difficult part is rolling them and keeping them round when you cut, but even though I struggled with that, they came out very nicely. The green onions and thyme especially make them aromatic and give them a nice rich, onion-y flavor. Me and my sister both had one just to taste before I sent them off with my mom, and it was incredibly difficult to say goodbye to the rest... I'll definitely be making these again!
